How to make Vegetarian Curry Okra

How to make Vegetarian Curry Okra

Today I am going to show you how to make some quick, simple curry okra. This is a nice little vegetarian dish and you are going to love it.

List of Vegetarian Curry Okra ingredients
1 medium sizes onion
3 cloves of garlic
Some fresh ground black pepper
1 tablespoon of curry powder
1 chili pepper
500 grams of okra
3 tablespoons of vegetable oil

Okra is notorious for using a lot of oil when you are frying it so this time I am going to use one of those non-stick pans because of this.

Vegetarian Curry OkraI will now place 3 tablespoons of vegetable oil and my pan is on medium-high heat, I am now going to toss in one medium sized onion that I diced up finely, I am also going to add three cloves of garlic that I just chopped earlier.Make sure to give that a quick stir and turn down the heat to low, after about 3-4 minutes you are going to notice that some of the edges are going to turn brown in color.

There is really a ton of flavor in here so we are going to hit it now with some fresh ground black pepper and we are also going to add one tablespoon of curry powder.
This curry powder is mimicking a madras flavor, sprinkle that in there and give that a good stir, remember that my heat is on low because now I am going to toast this curry powder in order to really release the flavors.
Vegetarian Curry OkraIt is already smelling really wicked in this kitchen and it is now time to turn the heat up to medium-high and I am going to add the chili pepper, I am also going to add one chopped up pimento pepper, make sure to give it a good stir as it is going to start going green.

Make sure to have you kitchen window open and it is now time to add all that okra down into that pan, the secret to cooking a great okra is to wash it thoroughly, dry it with some paper towel and cut it up into small pieces that you can easily stir down in the pan.

You also need to make sure that you do not add too much salt, salt is going to make it really slimy and this is why we are going to add the salt near the end, remember to never put a lid on the pot in order to avoid moisture from getting because we want to edges to be nice and toasted and crisp.

If you like lemon you might want to add just a little bit of lemon juice on top, it will give it a nice kick and that lemon juice will definitely lift up the flavor of the dish.

How to make Zucchini Fritters

How to make Zucchini Fritters

Today I am going to make some delicious zucchini fritters, these are absolutely delicious as I came up with a recipe that is full of flavor. This recipe is going to be so light and refreshing that you are going to want to make it all winter.

List of Zucchini Fritters ingredients
2-3 medium sized zucchinis
½ cup of parmesan cheese
2 garlic cloves
2 eggs
½ cup of flour
¼ cup of fresh mint
¾ tablespoons of salt
½ tablespoons of baking powder

First, I am going to get started with the zucchinis, I am going to grade the zucchinis as you may want them to be kind of ribbony so make some really long graded strides.

How to make Zucchini FrittersAfter I graded all my zucchinis I am going to add half a teaspoon of salt in here, the salt is going to extract all of the liquid out of the zucchini and make less soggy for the fritters so make sure you give it a nice stir.

You are going to be amazed by how much water comes out of the zucchini bowl, while we are waiting for the zucchinis to dry we are going to go ahead and prepare everything else.

I am going to start with two cloves of garlic and just go ahead and chop them really fine, set the garlic aside and start chopping the mint. What I like to do with my herbs is to just roll it up before chopping because it will really help in the chopping process and you will get some really evenly sliced mint leafs.

I am now going to combine the mint and garlic into a bowl, it is now time to make the sauce so I am going to crack two eggs into a bowl and whisk them up with a fork, next I am going to take a half a cup of parmesan cheese and drop in some salt.

After I add the salt I am going to stir these ingredients a little bit before I add my half cup of flour with half a teaspoon of baking powder, mix all the ingredients really well and make sure that you’re not going to be stirring it too much, just until it is really moist and well coated.

After I mix it really well I am going to add in the zucchinis and mix it really well, you can use your hands if you want but just make sure that your butter is distributed very evenly.

It is now time to take the mix over to the stove and turn the stove up to medium-high and add in some oil and place the ingredients into the pan and make sure to cook it on each side for 5 minutes until it is golden brown.
